I made this Chocolate & Apricot Bark Recipe as end of year teacher gifts a few weeks ago. I wanted to make something, together with the kids, that was simple to make and didn’t contain nuts – since it was being delivered in a nut free environment.
Chocolate and apricots seemed a sensible option and I got the kids to work helping me chop the dried apricots. I quickly discovered that chopping dried apricots is a fantastic cooking with kids activity… took them ages and they were focused and immensely proud of each apricot that they chopped up for their teachers.
I must remember this task for the next time I have them wanting to help in the kitchen and I need to get on with other tasks!
They also enjoyed sprinkling the chopped apricots over the melted chocolate…
Back to the bark… It’s super simple to make – you melt chocolate, pour it into a tin and top with your chopped apricots. The tin is then placed in the fridge to set. Once set you simply break up your bark and enjoy!

Thankfully there were a few leftover bags and my Husband insisted this was the BEST chocolate he’s ever eaten!!
