Udon Noodles Soup Recipe
Now that Winter has officially begun here in Melbourne I am in serious soup making mode.
At least once a week we have roast chicken for dinner and all the bones and carcass is saved for making fresh chicken stock which is then enjoyed through the week in various soups.
A favourite being Udon Noodle Soup. It’s always enjoyed by the whole family (including my picky eating oldest) and it’s a truly nourishing way to enjoy udon noodles.
It couldn’t be simpler to make:
- Bring 1 Litre of chicken stock up to the boil. (Click here to learn how to make homemade chicken stock)
- Once boiling add a package of Udon Noodles. (Where to find Udon Noodles)
- Add vegetables (except spinach/green leafy vegetables) at the same time.
- Cook until the noodles and vegetables are softened to your liking.
- Once cooked stir through spinach or another green leafy vegetable. (Parsley is also great in this soup.)
- Add salt to taste, serve and enjoy!
I’ve made Udon Noodles Soup twice in the past week. It really is so simple and yummy!
