Low Carb Pumpkin Mousse Recipe
If you’re a fan of all things sweet pumpkin desserts, then you’re going to LOVE this recipe. It’s sweet and creamy and tastes almost like a pumpkin cheesecake. It’s just one of the easiest low carb pumpkin recipes.
You can use double, thickened or whipping cream – whatever cream you can whip to thick white peaks is what you should use.
Feel free to use canned pumpkin puree. It’s a little hard to find here in Australia. (Wish I could order enough to last me all of pumpkin season!)
So, I just boiled up some pumpkin in water and then pureed it until smooth. There’s a half a cup used in this recipe and I also used the pumpkin puree in pancakes and even brownies. (Recipe coming soon!)
Low Carb Pumpkin Mousse Recipe
- 1/2 Cup Mascarpone
- 1/2 Cup Pumpkin Puree
- 2 Tablespoons Stevia
- 1 Cup Cream
- In a large bowl, whisk together the mascarpone, pumpkin puree and stevia until smooth.
- In a separate bowl, beat the cream until thickened.
- Gently fold the thickened cream into the pumpkin mixture.
- Move to a serving bowl, refrigerate for a couple of hours to thicken and enjoy.
4 Servings. Macros per serving: 3.5g Net Carbs, 30g Fat, 2.5g Protein
