This is the simplest, yummiest salad. The colours highlight the brightness of summer to me. I make it through the year, but with the heatwave we’ve had in Melbourne in the past week, I have made this salad a couple of times, to keep us nourished with a refreshing, yet fulfilling salad.
I have to point out, that my fussy 3 year old wouldn’t even look at this salad, but my “foodie” 18 month old LOVED it! He did end up covered head to toe in beetroot red, but his bright smiles as he ate his way through a bowl of this yummy salad made up for it. Of course in the summer heat, it may be best to serve this to your little one in their high chair with just a nappy on. That way, it’s not too much of a nightmare to clean the beetroot off their clothing – you can just dunk them in a bath afterwards to wash all the beetroot juices off their chubby tummy. (well, at least my 18 month old has the cutest chubby tummy!) OR you could just hide the salad and keep it for yourself! Your choice!
Beetroot & Lentil Yummy Summery Salad
1 Tin Diced Beetroot
1 Tin Low Salt Lentils
1 Red Pepper/Capsicum
200g Spinach Leaves
- Open tins of beetroot and lentils and throw them into a large salad bowl.
- Wash, de-seed and finely dice the red pepper then throw them over the beetroot and lentils.
- Wash and gently toss in the spinach leaves.
- Serve with your favourite salad dressing.
