I recently found myself with a kilo of Sweet Potatoes that was calling out to be cooked with. I decided to peel, chop up, boil and mash the whole kilo. The pot of Sweet Potato Mash was then shared between various Sweet Potato recipes over the course of a couple of days.
I ended up with four different dishes from the one pot of Sweet Potato Mash. Today I’ll share the first of the four dishes – the others will be posted in the coming days.
I’ve mentioned in the past my success with serving Mr 3 French Toast. So, I thought I’d include a few tablespoons of the Sweet Potato Mash into the beaten egg and milk batter.
Two slices of wholemeal bread were then dipped into the batter and fried until golden on both sides.
The result was an extra wholesome serve of French Toast – with hidden Sweet Potatoes.
Just as with the previous French Toast Recipe, I buttered the Sweet Potato French Toast with Avocado, to disguise the dish as regular toast and as a bonus – added even further nutrient goodness! Thankfully, it worked and Mr 3 happily ate every morsel!
