Through the week, I like to make the kids healthy snacks to keep them going between meals. I find at mealtimes they eat mostly wheat based dishes (including bread, cereals and pasta) – so for their snacks, I like to feed them non-wheat based ingredients – to balance their day out. This includes using nuts or oats in place of plain flour.
I like a cookie like this, a cookie that’s full of nutritious ingredients. I’m happy to treat the kids to a couple of them between meals, knowing they are being nourished with foods like oats, eggs and apples.
The cookies are incredibly sweet, thanks to the chunks of apples. You could reduce the sugar even further if you want to, or remove it altogether and increase the honey quantity.
The Gluten Free Oat and Apple Cookies are adapted from a recipe for Apple Cobblestone Cookies, which suggests allowing the cookie mixture to sit for 30 minutes to give the oats a chance to absorb the flavors of the mixture. What a clever idea! I’d never thought to do that with Oat cookies in the past (and I’ve made a fair few of various descriptions!) – it definitely enhanced the flavor and is a technique I will be repeating in future.
The kids LOVED these cookies, they kept asking for more and I don’t blame them – they were crunchy and sweet and similar in taste to a golden granola bar, only without the calories! (not that they worry about that sort of thing, it’s good to know for us Mum’s that we can indulge in a couple of cookies without too much guilt!)
Gluten Free Oat and Apple Cookies
Adapted from Apple Cobblestone Cookies
2 Cups Rolled Oats
1/3 Cup Brown Sugar
1 teaspoon Bicarbonate Soda
1 teaspoon Ground Cinnamon
2 Eggs
1/4 Cup Honey
2 Apples, peeled, cored and chopped to make 1 and 1/2 Cups of Chopped Apples
1. In a large bowl, combine the Oats, Sugar, Bicarb and Cinnamon
2. In a separate bowl, beat together the eggs and honey until smooth.
3. Pour the egg mixture and apples over the oats mixture and stir until well combined.
4. Allow the cookie mixture to sit for 30 minutes to allow the oats to absorb the flavors.
5. Preheat the oven to 180°C/350°F and line two baking trays with greased baking paper.
6. Place tablespoons of the oat mixture onto the greased baking trays and place in the oven.
7. Cook for 10 to 15 minutes or until golden.
8. Remove from the oven and allow to cool before removing from the tray. They become more solid and crunchy the longer they are allowed to cool for.
