Last week in Real Food On A Budget I explored 10 ways to enjoy eggs. This week I’m going to share 10 ways to make use of leftover roast chicken. So, in this instance – the egg did come before the chicken! 😉
Once the Roast Chicken has cooled completely, I like to remove all of the leftover chicken pieces to a bowl (for use in other recipes) and be left with just the bones and carcass. I then boil up the bones and carcass, along with some onions, carrots and vinegar and let it simmer away on the lowest light on the stove for a few hours. The stock can then be drained and used within a few days or frozen in portions ready for the next time chicken stock is needed. Bring new flavor to the chicken by frying it along with your favorite vegetables and a dash of honey.
The other week I used some of the leftover Roast Chicken in this recipe for Coconut Chicken with Quinoa and Vegetables.
I simply cooked the dish according to the recipe and added the cooked chicken towards the end of the cooking time rather than brown it at the beginning.
When there’s only a small portion of leftover chicken, it goes straight into a Chicken and Vegetable Frittata. Simply whisk together a few eggs and pour over your chicken and your vegetables of choice and cook on the stovetop or in the oven until golden.
Leftover Roast Chicken is a favorite with the kids. I often serve it in a cute Muffin Tin Meal, as I did here, along with some popcorn and Orange and Tomato Salad. (where to find a muffin tin)
6. Chicken Salad
Combine leftover chicken with your favorite leafy greens and other vegetables, drizzle over a little homemade salad dressing and you’ve got yourself your very own signature chicken salad!
7. Chicken and Avocado Sandwich
Leftover roast chicken regularly finds it way into a couple of Chicken and Avocado Sandwiches for work lunch for my Husband. It’s quick and tasty and he loves them!
8. Chicken and Mushroom Pasta
Brown and onion and some mushrooms in a large frying pan, once browned, add the chicken and cook until heated through then simply mix together with your favorite cooked pasta. For a sauce you could simply pour over some coconut cream or pouring cream to pull the dish together.
Leftover chicken is perfect for use in any chicken soup. Our favorite of late is this Chicken & Lentil Soup.
10. Chicken Burger/Wrap/Burrito
Fill a burger/wrap/burrito with leftover chicken, cooked or raw vegetables and your sauce of choice.
