The really funny thing about my kids is that they have completely opposite taste buds, which is best illustrated by their reaction to their plate of Green Eggs & Cheese.
My 5 year old wanted ONLY the Green Eggs, but NO cheese. My 3 year old wanted NO Green Eggs, ONLY the little Feta Cubes and a few small handfuls of Spinach Leaves. See – completely opposite! I did still encourage them to take a bite of the “NO” food and each obliged but still preferred to eat what their taste buds wanted to eat. Sometimes I’m in awe of their differences and other times marginally frustrated!
Regardless of their mixed reactions, I still view this dish as a massive hit in my books – my 5 year old wolfed down the Green Eggs and his brother the accompanying cheese and spinach leaves. From an “adult” perspective the dish is simply delish – spinach and feta is a truly perfect flavor combination.
How To Make Green Eggs:
1. Place a handful of Spinach Leaves into a mini food processor. (where to find a mini food processor)
2. Blend the spinach leaves in the mini food processor until finely chopped.
3. Add an egg into the mini food processor.
4. Blend until you have smooth, green eggs!
