Raw Macadamia & Coconut Fudge

This Raw Macadamia & Coconut Fudge is super sweet and rich and my kids went absolutely CRAZY for it. In fact, my 3 year old had a full blown tantrum when I told him they were finished!! Yes, they’re that good!

I have a soft spot for macadamias, I just adore them with white chocolate (preferably in a cookie, but just combined together as a treat would do too!) and this fudge also have that richly caramel-fudgey type flavor.

My Husband isn’t a huge fan of these, he much prefers the richness of this Chocolate Orange Cake than the uber-sweetness of a fudge-like treat. That’s ok – more Raw Macadamia & Coconut Fudge for the kids and I!

Raw Macadamia & Coconut Fudge

Ingredients

  • 2 Tablespoons Coconut Oil
  • 10 Dates
  • 15 Macadamias

Instructions

  1. Place the coconut oil into a mini food processor and blend until smooth.
  2. Tear the dates into quarters and place in the mini food processor and blend until smooth.
  3. Add the macadamias to the mini food processor and process until the mixture forms a moist fudge dough.
  4. Place teaspoons of the dough into a candy mold and place in the fridge for a few hours or until set. Or - place in the freezer if you're impatient and want to indulge quicker!
