Raw Cashew Butter Balls Recipe

After making the Raw Macadamia & Coconut Fudge last week, it sent me on a journey of discovery to see what other delicious date/nut combinations I can make! These Raw Cashew Butter Balls are just the first treat and they are SUPER addictive and SO good! (It’s fair to assume that they won’t be the last delectable raw treat either!)

These Raw Cashew Butter Balls are the PERFECT Healthy Snack for the kids (and adults too) – a nourishing bite sized snack rich in protein.

Paleo & Vegan - 3 Ingredient Raw Cashew Butter Balls Recipe

The Balls harden, and are more sophisticated, when refrigerated. But – eaten straight away once rolled they are gooey and fudgey and decadently good!

 

Recipe Note – when including nuts in recipes, soaking and dehydrating makes them easier to digest. Yes, they technically won’t be 100% raw if you take this step with nuts, BUT they will be easier on your digestive system! Click here to read more about soaking nuts.

Raw Cashew Butter Balls Recipe

Cashew Butter Balls Recipe - Easy Raw Vegan & Paleo friendly gluten free cookie dough sweet treat

Ingredients

  • 1 Cup Pitted Dates, Chopped
  • 1 Cup Cashews
  • 0.5 Cup Cashew Butter

Instructions

  1. Place the chopped dates in a food processor and process until smooth.
  2. Add the cashews and cashew butter and process until the mixture forms a dough ball. You may need to scrape down the sides and help the mixture along to form a dough ball.
  3. Once a dough ball has formed, move the dough to a plate to ensure there are no accidents with the food processor blade.
  4. Form the mixture into 16 equal sized balls, refrigerate for at least an hour to harden and enjoy!
