This Letter E Ideas Lunch Box was an interesting one to put together. It’s been a while since I’ve cooked with eggplant and it was a good excuse to re-introduce the delicious ingredient to the kids.
I chose to simply slice, salt and fry the Eggplant to demonstrate the delicious Eggplant flavour to the kids.
I also included a hard boiled egg shaped as a star as the other Letter E Idea inclusion. Click here to learn how to make your own.
We wrote the Letter E Ideas words on the white board and discovered that the word Eggplant includes the word Egg – so it was 2 words in one – a fun learning discovery.
