Sauteed Asparagus With Feta
On returning from London the other week, I was thrilled to discover that Spring Vegetables have started appearing at my local farmers market.
There’s just something magical about enjoying the first of the Spring vegetable bounty including the garlic, leeks and asparagus you can see here.
Each spring I set about experimenting with asparagus, sometimes cooking old favorites (like Crispy Asparagus Fries) and also enjoying new favorites, like this sauteed asparagus with feta.
I haven’t specified the quantity for the feta because it depends whether you want to drizzle or shower your feta over your asparagus. (I personally prefer the latter!)

This dish works so well because the sweetness of the asparagus is perfectly balanced by the saltiness of the feta and so has become new favorite way to enjoy asparagus.
It’s particularly sensational with fried eggs!
