This Multi Coloured Carrot And Cabbage Salad is super simple to put together (or should I say grate together!) and it’s packed full of nutritious raw vegetables.
Recently I re-discovered my love of purple carrots. I’ve previously shared a recipe for a purple carrot soup and my latest way to enjoy this nourishing ingredient is in this colourful salad.
Be warned though – handling purple carrots can result in purple stained fingers, plates and utensils. It’s easy enough to wash off but does amuse the children in the meantime!
Regarding dressing this salad – our favourite is squeezing half to one orange over the salad, it’s the perfect flavour combination.
You could turn this salad into a “slaw” by mixing through your choice of mayonnaise, sour cream or plain natural yoghurt.
I served this salad to my kids along with corn and smoked sausages and they enjoyed the brightly coloured salad.

The completed salad looks like a colourful bowl full of confetti and is definitely appealing to children… and adults too!
