Recently I had the urge to get in the kitchen with my kids and make cookies. They (obviously) agreed when I asked if they’d like to make ginger cookies and so we made an old favourite of ours – Annabel Karmel’s Ginger Cookies.
The recipe is from one of my all time favourite cookbooks – The Fussy Eaters’ Recipe Book: 135 Quick, Tasty and Healthy Recipes that Your Kids Will Actually Eat by Annabel Karmel.
The author has kindly shared the recipe on her website, you can find it here.
The recipe is actually pretty simple – you combine the ingredients together to make a dough. I get my kids to help by measuring out the ingredients on the scale and then mixing them together.
They usually get a tiny bit side tracked when the scale comes out and measure EVERYTHING they can get their hands on, so I let them have their fun and we take our time making the dough.
Next is the part where they have to be patient and wait for the dough to have some time in the fridge…
While we waited I went on a hunt for a collection of cookie cutters we could use. I got the boys input and in the end we decided on these 5:
The cookies were placed on a waiting cookie tray and we kept re-rolling out the dough and cutting until all the dough was used up. To avoid waste, I rolled all the tiny end bits together and formed a few small round, flat cookies.
The boys waited patiently while the ginger cookies cooked and cooled and then we got to enjoy our homemade cookies for morning tea. They were delicious as always!
