The other day I mentioned that I’m working to significantly lower (but not eliminate) my carb intake. (You can read more here.) Aside from addressing my main meals, I’ve also been looking for low carb and no carb snack ideas. That’s where these Ricotta On Cherry Tomatoes are perfect.
My tub of Ricotta has just 3.8 grams of carbohydrates per 100g and since the snack only includes a few teaspoons/tablespoons (depending on my mood/size of tomatoes) this is a pretty low to no carb snack.
I’ve been experiencing a bit of a “ricotta revolution” lately – even before I was “carb aware” I’ve been enjoying ricotta in various meals (on toast, pancakes etc). I enjoy the mild, sweet flavour and creamy texture.
In conjunction with my “ricotta revolution”, my kitchen has been overflowing with cherry tomatoes of all shapes and sizes lately. So, it was only a matter of time before the two ingredients collided in one way or another.
To make Ricotta on Cherry tomatoes simply slice a few cherry tomatoes in half and top with a dollop of ricotta. You could even replace the top half of the tomato for a cute (but messy) sandwich.
Ricotta and tomato is a classic flavour combination and this super simple snack takes advantage of that fact and is perfectly nourishing!
