I’m getting a teensy bit carried away with cooking and sharing low carb recipes over the past couple of weeks. This recipe is one I often have a play with and thought it was about time that I shared the deliciousness with you…
To make the cauliflower rice you can either use your food processor or a hand held grater to chop the cauliflower into rice like pieces. I prefer to use my hand held grater and a large bowl because it’s quick and easy and less washing up than the whole food processor! I use the coarse side of the grater and every now and then let a tiny stalk fall into the bowl so that the dish will include a variety of shapes and sizes.
The sausages I chose to use in this instance were a gluten free lamb and garlic variety. The flavour from the sausages was blended into the dish when cooked so I decided not to add a sauce/topping as the flavour was delicious. If you have plain sausages (or prefer things a little saucier!) then feel free to top with soy sauce, tamari or another complementary sauce to taste.
Cauliflower Fried Rice With Zucchini And Sausages
- 1/2 to 1 Head Cauliflower (depending on the size)
- 1 Onion, peeled and chopped
- 2 Garlic Cloves, peeled and finely chopped
- 2-3 Zucchini, chopped
- 300g Gluten Free Sausages (pre-cooked and chopped)
- Coconut Oil Or Butter For Frying
- Grate the cauliflower into a large bowl. You can grate as fine or as course as you like. I prefer using the coarse side of the grater and even leave a few tiny cauliflower stalks too.
- In a large frying pan heat the coconut oil or butter.
- When hot add the onion and garlic cloves and cook over medium/high heat until slightly softened and fragrant.
- Add the zucchini and cook until lightly browned.
- Finally, add the chopped sausages and cauliflower rice and cook until the sausages are heated through and the cauliflower rice is cooked to your liking.
This is a truly delicious dish and you don’t miss the grains one bit!
