This Ricotta and Lime Mousse is sublime! (sorry!) If you hadn’t noticed I’ve been seriously loving ricotta lately. While spreading it on toast one morning I noticed my ricotta tub contained a delicious sounding recipe for “Lemon Ricotta Mousse”.
As it happened my Husband was gifted a bounty of fresh limes from a patient’s tree and I was trying to decide what to do with them all…
Inspiration struck and I decided to experiment with substituting the lemons for limes and the results were delicious. Kinds of like a crust-less cheesecake but no quite as rich or even as sweet as a cheesecake.
I chose to adapt the recipe to taste and the whole family couldn’t get enough of it!
Ricotta and Lime Mousse Recipe
- 200g/7 Ounces Ricotta
- Juice and Zest of 3 Limes
- 1 Tablespoon Raw Sugar
- 1 Cup Double Cream
- In a large bowl, mix together the ricotta, lime and sugar until well combined.
- In a separate bowl beat the cream until thick.
- Gently fold the cream into the ricotta mixture.
- Transfer to a serving dish and refrigerate for at least a couple of hours to chill.
