Sweet Potato Chocolate Chip Muffins Recipe
In the past I would have made these muffins JUST so my kids would have a small portion of vegetables. Now that my kids it a much wider (and healthier) variety of food, I create recipes like these just for the pure deliciousness! (Of course it doesn’t hurt that they get a small portion of vegetables while enjoying a sweet treat!)
For Mothers Day my kids got me a brand new muffin/cupcake tin, baking/cookie tray and muffin/cupcake liners. I couldn’t wait to get cooking with my new gifts and this was the very first recipe I made in my new turquoise muffin tin.
I envisioned making these muffins with chocolate chips but only had chocolate chunks in the pantry. Being resourceful, I got my oldest son to help me break the chunks into chips. He was more than happy to help me. Needless to say he “quality controlled” the chocolate to make sure it was just right!
Making these muffins is super simple – cook and puree sweet potatoes then mix it into the wet ingredients required for the muffins. Combine together the dry ingredients and then mix all of the ingredients together. Bake and enjoy!
