Zucchini and Potato Fritters
Week 2 of 30 Days Of Vegetables For Kids is done and dusted and it’s been another week of fun and inspiring veggie inspirations.
Here’s some of the highlights:
- We visited a local farmers market and bought a huge haul of local, fresh vegetables.
- As a snack we topped celery with a variety of natural nut butters.
- Broccoli was steamed as a veggie side with dinner.
- I found rainbow carrots at a local supermarket and we enjoyed them as a snack platter.

Onto these Zucchini and Potato Fritters… They are super easy to make, the kids love them and best of all they are packed full of veggies!
The recipe is adapted from an old family favourite – Potato Pancakes Recipe. They are always a huge hit and I’m sure your family will love them too!
