What’s been happening this week:
We’re trying our best to make the most of every sunny day before we head to the chilly climates of Tokyo, London and Dublin next week. So, it’s been a flurry of park catch ups, packing and cooking this week.
Here’s what I take to a typical picnic at the park:
Fried Potatoes with Veggies and Scrambled Eggs
Onto this comforting Fried Potatoes with Veggies and Scrambled Eggs dish…
As I mention in the below video, this dish is not the prettiest culinary creation. Trust that it tastes WAY better than it looks!
It makes the PERFECT meat free dish that’s so hearty and packed full of flavour that you won’t even miss the meat!
To make this dish:
1. Boil Potatoes until softened then drain.
2. Cook Leeks and Asparagus in a large frying pan.
3. Once the veggies are cooked, top with potatoes and cook until slightly browned.
4. Add 4 Beaten Eggs. (I like mixing through a couple of tablespoons of cream!)
5. Cook until the eggs are just set but not overcooked.
6. Enjoy as is or topped with parmesan or seasoning of your choice.
This recipe is an adaptation of one of our favourites – Potato Perfection. Try it yourself and you’ll understand why I call it “Potato Perfection!”
