Baked Chicken Drumsticks
I love one dish roasted meals and this Baked Chicken Drumsticks recipes is a perfect example.
I have not given quantities because it really depends on the number of people you’re feeding and whether you’ll be wanting/needing leftovers. As a general rule, count on 2-3 drumsticks per person and you’ll have more than enough.
Preheat your oven to 180C/350F and add the following into a large baking dish:
- Chopped Carrots
- Chopped Potatoes
- Chopped Onions
- Cloves of Garlic (with the skin on)
- Chicken Drumsticks/Legs
Drizzle over olive oil, give a shake of salt and/or pepper and other seasoning of choice to taste (Rosemary would be great!) then pop it in the oven for 30 minutes.
Remove from the oven and turn over the chicken drumsticks and vegetables and place back into the oven for a further 30 minutes or until crispy and cooked through.
These Baked Chicken Drumsticks are like a cheeky way of making a roast chicken dinner. In our family the drumsticks are always the first to go so having a giant dish full means everyone gets to enjoy their favourite!
