Leftover Roast Potatoes
This is the absolute BEST way to enjoy Leftover Roast Potatoes. Nowadays, whenever I make roast chicken or lamb I always include way more potatoes than we need for the meal specifically so that I can enjoy this dish.
Here’s how:
- Cut your leftover roast potatoes into bite sized pieces.
- Heat a little coconut oil/olive oil/butter in a frying pan.
- When hot add the prepared potato pieces.
- Add seasoning to taste by adding salt, pepper or herbs such as rosemary or sage. Keep in mind that they will have the flavour from the roast so you don’t want to take away from that – too much.
- Cook until hot, crispy and golden to your liking.
You can enjoy these perfectly cooked roast potatoes as is or eat them in my personal favourite way – with fried eggs and sautéed spinach.
