Mushroom Carbonara Pasta Recipe
I’ve been making this SOOOO many times over the past couple of months. It’s always a welcomed meal that’s tasty and nourishing.
It couldn’t be simpler to make this dish, it only takes a few ingredients…
Here’s how you make it:
- 500g Mushrooms, washed and sliced
- 1 Onion, finely sliced
- 250g pasta – fettucine, taglietelle etc.
- 2 eggs, beaten
- 1/2 Cup finely grated Parmesan (parmiagiano reggiano)
- In a frying pan, fry the sliced mushrooms and onions until softened and reduced.
- Cook the pasta according to the packet instructions. Once cooked, drain and reserve about half a cup of cooking water.
- Combine the eggs and parmesan together in a bowl.
- Pour the cooked pasta and reserved cooking water over the mushroom mixture and toss to combine.
- Finally, pour the eggs and parmesan over the pasta and quickly stir through.
- Serve immediately, topped with more parmesan if you like.
