Sauteed Cauliflower Salad In A Jar
I’ve become a bit obsessed lately with salads in a jar. I’ve been experimenting with all sorts of delicious, nutritious flavour combinations and this one has quickly become one of my favourites.
The flavours resemble a potato salad, except there are no potatoes – only nutritious vegetables and hard boiled eggs.
How to make the Sauteed Cauliflower Salad In A Jar:
- 1 Head of Cauliflower, chopped into bite sized pieces
- 1 Red Onion, peeled and finely chopped
- 3 Garlic Cloves, peeled and finely chopped
- 1/2 Cup Mayo
- 1/2 Cup Plain Natural Yoghurt or Sour Cream
- 1 Red Pepper, finely chopped
- 3 Hard Boiled Eggs, peeled and sliced
- Giant Handfuls of Spinach
- Heat a little olive oil in a frying pan and when hot add the cauliflower, onion and garlic.
- Sautee until golden and just cooked.
- Remove to cool.
- Combine the mayo and yoghurt/sour cream together in a bowl.
- Get out four mason jars. (Where to find mason jars.)
- Place 2 tablespoons of the mayo mixture into each jar and top with the cauliflower.
- Top with chopped peppers then sliced hard boiled eggs and finally the spinach.
- Enjoy immediately or store in the fridge until needed. When serving give the jar a shake and enjoy!
