Cheesy Potato and Cauliflower Gratin

Cheesy Potato and Cauliflower Gratin Recipe:
- 750g Potatoes, sliced
- 1/2 teaspoon salt
- 1/2 Large Cauliflower or 1 whole small cauliflower, chopped into bite sized pieces
- 2 Tablespoons Butter
- 3 Garlic Cloves, Peeled and Finely Sliced
- 2 Tablespoons Plain Flour
- 1 Cup Milk
- 1.5 Cups Grated Cheese – I used a combination of Parmesan and Colby/Cheddar Cheese
- Preheat the oven to 180C/350F and get out a large oven proof dish.
- In a large pot, cover the potatoes with water and salt.
- Place the potatoes onto the stove and bring up to the boil.
- Once the potatoes are boiling add the cauliflower.
- Cook until just tender then remove from the heat, drain and pour into your oven dish.
- To make the sauce, melt the butter in a small saucepan.
- Add the garlic and cook until fragrant.
- Add the flour and stir through until thickened.
- Add the milk, very slowly, while stirring continuously.
- Keep stirring until all the milk has been added and the sauce has thickened.
- Once the sauce has thickened, stir through half of the cheese until it’s fully melted.
- Pour the sauce over the potatoes and cauliflower and stir through until well combined.
- Top with the rest of your grated cheese and place into your preheated oven for 30 to 45 minutes or until golden to your liking.
