Chocolate Chia Pudding With Optional Chocolate PB2 Peanut Butter
This is the first of my PB2 Experimentation successes and I couldn’t wait to share it with you. I’ve been enjoying this Chocolate Chia Pudding almost daily as my afternoon snack since I first tried PB2 last week. (Watch the review and first taste test here!)
We prefer our Chia Puddings thick and gelatinous. If you’d prefer a smoother texture then simply blend the mixture before popping it into the fridge to set.
Here’s how to make this Chocolate Chia Pudding Recipe:
- 2 Tablespoons Chia Seeds (Where to find)
- 1 Tablespoon Chocolate PB2 Powdered Peanut Butter (Where to find)
- 1 teaspoon Cacao Powder (Where to find)
- 1 to 2 teaspoons Maple Syrup (Where to find)
- 1/2 Cup Greek Yoghurt
- Combine the Chia Seeds, PB2 and Cacao Powder together in a bowl.
- Add a teaspoon of the Maple Syrup and Greek Yoghurt and stir until smooth. Taste to see whether you need to add the further teaspoon (or more) of Maple Syrup.
- Place in the fridge for at least a few hours or overnight to thicken to a pudding.
- Enjoy as is or topped with your favourite fruit.
