These Pumpkin Muffins are easy to make and filled with healthy ingredients and delicious flavours.

My kids weren’t sure about the taste of these pumpkin muffins at first, but once they had sampled a whole muffin they begged me to make them again, following exactly the same recipe. A sure sign of a successful recipe!

If you’re new to using Coconut flour then note that it is an incredibly absorbent ingredient, soaking up liquid at an incredible rate. Only a third of a cup of coconut flour is needed to give this recipe the desired texture, as you’ll see in the video tutorial below.

I’ve been loving experimenting with PB2 Powdered Peanut Butter lately. We love the flavour and I love that it’s packed full of protein, always looking for more ways to get the kids to up their protein intake and this is a delicious way!

This is SUCH an easy recipe to put together. It’s simply a matter of whisking the wet ingredients together, stirring through the dry and popping it into a muffin tray. Easy!
