Sausage and Potato Bake
This Sausage and Potato Bake is just such an easy recipe to make and adapt to your tastes. It’s simply a matter of cooking potatoes and other vegetables in the oven for about 20 minutes to get a head start and then adding in your sausages to bake while your other vegetables continue cooking.
It’s a regular dish on our dinner menu and one the whole family enjoys. Crispy potatoes, beautifully roasted vegetables and sausages… perfection!
As you’ll see in the video, my cat was also very interested in the making of the sausage and potato bake. He was hanging around the kitchen, walking past the camera and just making a general (adorable) nuisance of himself! He’s usually good and keeps his distance from me while I’m in the kitchen, but has been getting pretty brazen lately (see the Split Pea Soup recipe the other day for evidence).
Sausage and Potato Bake Recipe
- 1 Kg/2.2 Pounds Potatoes
- 1 Large Onion
- 1 Whole Head of Garlic
- 1 Red Pepper
- 2 Tablespoons Extra Virgin Olive Oil
- Pinch of Salt
- 500g/18 ounces Sausages, chopped into bite sized pieces
- Preheat the oven to 200C/400F and get out a large baking dish.
- Wash and quarter the potatoes and onion and place them into the baking dish.
- Separate the garlic cloves but keep the skin on and place into the baking dish.
- Chop the red pepper into roughly the same size as the potatoes and add to the baking dish.
- Drizzle the olive oil and salt over the vegetables and give it a shake.
- Place into the preheated oven for 20 minutes.
- Remove from the oven and mix through the chopped sausages.
- Place back into the oven for 20 minutes then remove, give the dish a good mix and place back into the oven for a final 20 minutes or until everthing is cooked through and golden.
