Vegetable Fried Rice
I like to mix up my meals through the week, so I regularly cook meat free meals and am always experimenting with flavourful meat free concoctions. It was during experimentation that I came across this delicious combo. I just LOVE easy, simple recipes like this that take very little effort to prepare and yet you’re rewarded with a flavourful dish that you just have to make over and over and over again.
I don’t include any sauce in this dish as I prefer to enjoy the natural sauce of a runny egg yolk. If you’d like a saucy addition then feel free to drizzle over a little soy sauce, tamari or your sauce of choice. The only other addition I adore is a couple of tablespoons of crumbled feta – I just love the saltiness that it brings to the dish, so do it every time!
Vegetable Fried Rice Recipe
- 1 Large Red Pepper
- 1 Large or 2 Small Onions
- 2 Garlic Cloves
- Coconut oil, for frying
- 2 Cups Cooked and Cooled Rice
- An egg per person
- Clean, peel and finely chop the pepper, onions and garlic.
- Heat a little coconut oil in a large frying pan. When hot, add the vegetables.
- Cook until golden and softened.
- Add the rice and stir to combine.
- Cook until the rice has heated through and is golden.
- Portion out the rice into bowls.
- Meanwhile, fry up an egg per person.
- Top the rice with the fried egg and enjoy!
