Healthy Meal Prep Ideas + Mini Grocery Haul
Being prepared can help make it so much easier to enjoy healthy meals, lunches and snacks with very little fuss. In this post I’ll share some of my favourite healthy meal prep ideas with you.
Sunday Produce Prep
Each Sunday (or grocery shopping day) try and go through your produce and wash, clean and chop fruit and vegetables ready for meals through the week. My rule of thumb is to chop the produce as big as the container allows, so that I can be flexible with it’s later use.
For example this ENORMOUS celery bunch. I’m not quite sure what I’ll be using the celery for, maybe salad, maybe lunch boxes, maybe ants on a log or maybe even in a soup. Having the celery sticks trimmed of their ends and leaves and cleaned will make it easier when I decide what to do with them and I won’t be limited by their cut size.
I like to fill as many containers as my fridge has space for so that I can easily grab and go through the week. It makes life SO much easier!
Hard Boil Eggs
We go through heaps of eggs through the week. It’s such an easy ready made snack or part of a lunch box. While I’m in the kitchen prepping my weekly veggies, I have a pot of eggs boiling on the stove so I can keep an eye on them.
The hard boiled eggs may be turned into egg mayo for lunches or simply eaten whole as a snack.

Meal Prep For The Week
Think about the meals you’ll be making for the week. What can you prep when you have time on Sunday afternoon? Marinate meat? Prepare a couple of salads in jars? While you have the time, get as much done as you possibly can to save you time during the week.
Also think about whether your Sunday lunch or dinner could be used for meals through the week. While you’re home on a lazy Sunday afternoon, why not roast a chicken for dinner? You could then use the leftovers for meals through the week and bones for stock and broth making.
