Sage and Sweet Potato Hash Recipe

Sage and sweet potato are a match made in culinary heaven. The flavours just bring out the best in each other and elevates this sweet potato hash to something really special.

This hash makes the PERFECT side with fried eggs for breakfast, although it’s also amazing with a plate full of nourishing meat (like the Silverside Corned Beef I shared the other week) for dinner.

Regarding the sweet potatoes, use either one enormous sweet potato, two medium sweet potatoes or three smaller sweet potatoes to get your 2 cups of diced sweet potatoes.

If you want to speed up the cooking process then simply cover the sweet potatoes with a lid for a few minutes.
How to cook sweet potato hash

Sage & Sweet Potato Hash Recipe

  • 2 Cups Diced Sweet Potatoes (from 3 small sweet potatoes which have been cleaned and peeled)
  • 1 small or 1/2 large Onion, peeled and finely diced
  • 2 Garlic Cloves, peeled and diced
  • 4 Sage Leaves, roughly chopped
  • Coconut oil or butter, for frying
  1. Heat a little coconut oil or butter in a frying pan.
  2. When hot, add the sweet potatoes, onion and garlic.
  3. Stir frequently and cook until the sweet potatoes are tender and golden.
  4. Once golden, add the sage leaves and allow to cook for a final couple of minutes for the flavors to combine.
  5. Remove from the frying pan and serve.
