Silverside Corned Beef Recipe
A highlight of every visit to London is salt beef sandwiches. There are a couple of spots around London which serve the most AMAZING salt beef sandwiches in the world. We make it our mission on every trip to eat our way around London and enjoy the meaty delights along the way.
This is a blast from the past… a photo of a salt beef sandwich in question circa 2009, when I was pregnant with my 2nd son and visiting family in London. The holiday itself that time was a nightmare – I had NO IDEA that it would be so tough to travel with an 18 month old and be about 3ish months pregnant. The holiday was a struggle and this sandwich is what got me through the trip without completely losing my sanity!
It’s the sandwich of my dreams. The meat is meltingly tender and amazingly flavourful.
Funny enough my now 6 year old who I was pregnant with at the time of this photo LOVES meat… he’d eat it for every meal of every day if I let him. Maybe it has something to do with this holiday?
Over the course of the past couple of years I’ve tried over and over to re-create the salt beef magic in my own kitchen. This Silverside Corned Beef Recipe is pretty much as close as I can get to experiencing the beauty of a salt beef sandwich – without suffering through a 24 hour flight to enjoy it!
Silverside Corned Beef Recipe
- 1.5 kg Corned Beef Silverside
- 1 Onion, peeled and diced
- 2-3 Garlic Cloves, peeled and diced
- 2 Carrots, diced
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Raw Sugar
- Salt & Pepper to taste
- Place all of the above ingredients into a large saucepan.
- Cover with water.
- Bring up to the boil.
- When boiling, reduce the heat to a simmer and cook for 1.5 hours or until tender.
- Remove the meat and discard the vegetables and cooking water.
- Slice the meat and serve.
