Day of Low Carb Eating – What I Eat In A Day (1st Day on Keto)
Over the weekend I commenced a Ketogenic/Low Carb Eating Plan that I’ll be following for the foreseeable future. While excited and inspired at my new eating regime, I decided to document my first day of eating – Breakfast, Lunch, Dinner and Snacks.
Breakfast
For breakfast I fried eggs in salted butter in a large frying pan, along with a portion of green beans. Once the eggs and green beans were cooked, I removed them from the pan and briefly sauteed a portion of spinach until it was wilted. I then popped it all onto a plate along with a quarter of an avocado, half a tomato, a chunk of brie and a dollop of sour cream.
It’s the perfect low carb breakfast – rich with a wide range of flavours and heavy in healthy fats. It made a delicious start to my day and I felt comfortably full until lunch.
Lunch
After my enormous, rich breakfast, I felt like a light, fresh lunch. I made a tuna salad bowl by lining the bottom of a bowl with spinach and topping it with chopped celery, a small tin of tuna, a dollop of sour cream and a dollop of mayo.
Mixed together it made a fresh and tasty tuna salad which was exactly what I was craving. I like mixing sour cream and mayo together as it gives me a wider range of nutrients and flavours than if I were to just include one or the other.
I also had a cup of chicken broth which I’d made the day before, in preparation for starting the Keto Diet. (Read how to make homemade chicken broth.)
Snack
My one snack for the day fell between lunch and dinner. While many low carb enthusiasts will shun fruit all together, I’m going to incorporate berries into my diet from time to time, in a small portion.
I went for a small portion of sliced strawberries and topped it with a generous dollop of cream. Although simple, it was strawberries and cream perfection and a snack I see myself enjoying from time to time on my Keto journey.
Dinner
I made a massive Lamb Shoulder roast for dinner so that we’d be able to enjoy leftovers for days. It’s great to have a go to meat portion ready and waiting for a couple of days when you’re starting out.
I went for the crispiest cuts and roasted it with carrots, garlic and onions. I also had a portion of cucumber slices as I find that it balances out the richness of the meat perfectly.
The lamb was the perfect ending to my first day of low carb eating. As I share this post, I am on my 4th day and I can already improvements – I have more energy than I’ve had in ages and have already lost over 2 kgs (4 pounds!).
