I’m 3 weeks into my Low Carb Ketogenic Diet and at first breakfast were really tricky. I’ve now gotten into a groove of mixing up my breakfasts and documented a week of breakfasts to share and inspire you.
In this post I’ll share 7 Low Carb Breakfast Ideas with eggs and soon I’ll also share a post with 7 low carb breakfast ideas without eggs. Make sure you subscribe so that when that post is published you’ll be able to read and be inspired by it too.
Day 1 – Garlic Mushrooms and Fried Eggs
Fry a generous portion of butter into a frying pan and add one chopped garlic clove per person.
Once golden add a half a cup of sliced mushrooms per person. Sautee until reduced.
Finally, add more butter if needed and fry 2 (or more) eggs per person until cooked to your liking and serve as is or topped with feta, brie or even Parmesan.
Day 2 – Cheese Omelette
Prepare an omelette following your favourite method, filling it with a generous portion of cheese.
Serve with sauteed spinach and sour cream.
Day 3 – Smoked Salmon and Scrambled Eggs
This is a WINNING breakfast combo – scrambled eggs, sauteed asparagus served with smoked salmon and sour cream. It’s decadent and delicious!
Day 4 – Crispy Cauliflower and Eggs
The previous evening I cooked a roast lamb with roast cauliflower on the side. I fried up the leftover cauliflower until crispy and golden and then served them with a couple of fried eggs.
You could fry up any leftover roast vegetables to go as a side with your breakfast.
Day 5 – Open Omelette/Breakfast Burrito
Cook an omelette and leave it open. Fill it with your fillings of choice, I chose to spread sour cream over the omelette and then top it with fried Halloumi Cheese and chopped avocado.
Then, enjoy the open omelette as is or carefully roll it up into a breakfast burrito.
Here are a few more ideas to fill your breakfast burrito:
- Sauteed mushrooms/spinach/peppers/onion/garlic
- Raw spinach leaves, diced tomato, cucumber,
- Cheese of choice – for example – grated cheddar, parmesan, feta, brie.
- Low carb salsa or other sauce
- Herbs/Spices – for example – chives, coriander, sage.
- Diced salami, cooked chicken or other meat.
Day 6 – Devilled Eggs
Since following a Low Carb/Keto diet I always have a bowl full of hard boiled eggs in my fridge. It’s the perfect go to ready made protein that can be included in any meal.
On this particular morning I didn’t feel like a hot plate for breakfast, but rather I wanted cold eggs. So, I quickly whipped up a plate of devilled eggs and they were perfect!
To make them I cut 2 hard boiled eggs in half, removed the yolks and placed them into a bowl. I then mixed through a teaspoon each of sour cream and mayonnaise and a pinch of mustard and salt. I then mashed the mixture together until smooth and filled the empty white with the yolk filling.
Day 7 – Salami & Eggs
For the final day I went for a big and meaty breakfast – frying diced salami and mushrooms until crispy and topping them with fried eggs.
