That’s even more the case now that I’m following the Low Carb Keto Diet. I want easy meals that are Low Carb friendly and just as hearty and delicious as carby counterparts.
This recipe is very simply thrown together, baked and voila, before you know it, you have an easy peasy chicken dinner!
Even if you’re not a fan of brussel sprouts I urge you to give this recipe a try. The quick baking in the chicken dish results in crispy, flavourful sprouts that you’ll love and come back to time and time again.
Chicken and Brussel Sprouts Bake Recipe
- 1kg/2.2lbs Chicken Legs
- 3-4 Garlic Cloves
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
- 500g Brussel Sprouts, halved
- Preheat the oven to 180C/350F and get out an oven proof dish.
- Place the chicken legs and garlic cloves into the oven proof dish.
- Drizzle over the olive oil and add salt and pepper to taste.
- Toss to combine.
- Place into the oven for 30 minutes.
- Remove from the oven after 30 minutes, turn the chicken legs over and add the brussel sprouts to the dish.
- Place back into the oven for a final 30 minutes or until this chicken is golden and cooked through.
