Making Low Carb Keto Ice Cream For The First Time – an easy, Atkins & low carb keto diet vanilla ice cream recipe. How to make low carb high fat ice cream.
Recently I acquired an ice cream maker. I’ve been wanting to experiment with all sorts of keto diet friendly flavours. Before I get to that though, I thought I’d start with an easy, simple vanilla ice cream – following the recipe in the instruction booklet that came with the ice cream maker.
Once you look into ice cream ingredients, you’ll realize that it’s really easy to substitute keto friendly ingredients to make a low carb ice cream, that tastes like “the real thing” but has a fraction of the carb content.
I took a couple of “lazy” shortcuts – namely I decided not to use an electric beater – I wanted to beat the mixture with a wire whisk and then I opted not to refrigerate the mixture to cool, but poured it straight into my ready and waiting ice cream maker.
The first taste of my keto ice cream made me realise just how I’ve missed ice cream! It tastes like the real thing – well, in reality all I changed was my choice of milk and sweetener yet it’s an incredibly low carb dessert.
Keto Ice Cream Recipe
- 250ml Milk of Choice
- 300ml Cream
- 2 Tablespoons Sweetener of Choice (or more to taste)
- Pinch of Salt
- 1/2 teaspoon Vanilla Extract
- Place all of the ingredients into a large bowl.
- Whisk until smooth.
- Turn your ice cream maker on.
- Pour the prepared mixture into the ice cream maker and churn according to the manufacturers instructions.
- Move to a freezer safe container and store in the freezer.
