Best Scrambled Eggs With Cheese
These easy cheesy scrambled eggs came about because lately I’ve been buying fancy feta to enjoy as part of my low carb, keto diet.
Once the fancy feta is finished, the jar contains a delicious, savoury brine which I’ve been trying to find uses for so as not to waste anything.
That’s where this dish comes in. I’ve been experimenting with adding a few tablespoons of the brine into an omelette and scrambled eggs and these easy cheesy scrambled eggs are the BEST use.
Of course you can make these by omitting the feta brine, though keep the recipe in mind for when you do have feta brine to hand, so you can sample the incredible cheesy goodness with the unique secret ingredient!
You can also feel free to include any amount of cheese you like for the added grams of protein. Choose from shredded cheese varieties such as cheddar cheese, American cheese, Monterey Jack or mozzarella cheese and also add in other cheese varieties like cottage cheese, Mascarpone cheese or cream cheese to create your own best cheesy scrambled eggs.
Add in a pinch of salt, black pepper, cayenne pepper, chopped fresh chives, fresh parsley or any other seasoning or herb you like to usually enjoy as a part of your health weight loss journey, to the egg recipe.
This perfect scrambled eggs recipe serves 1, double (or triple) the recipe to make a bigger batch of fluffy eggs that serves more.
Easy Cheesy Scrambled Eggs Recipe
- 2-3 Large Eggs
- 1 Tablespoon Heavy Cream
- 1 Tablespoon Feta Brine (Optional)
- 1/4 Cup Grated Cheese
- Unsalted Butter or Coconut Oil, for frying
- In a large bowl, whisk eggs, heavy cream and feta brine together until smooth.
- Melt butter or coconut oil in a frying pan over medium-low heat.
- When the butter has melted pour the scrambled egg mixture into the pan.
- Cook the eggs over low to medium heat, stirring regularly to scramble, moving the beaten eggs around and away from the edges of the pan.
- Once almost cooked, add the grated cheese to the top of the eggs and cook until the cheese melts and the cheesy eggs are cooked to a soft scramble, or to your liking, then enjoy your delicious egg breakfast.
