You may think of the Keto Diet as consisting of predominantly meat heavy meals. Well, it’s actually really easy to only enjoy meat a couple of times a week and instead enjoy plenty of meat free, vegetarian dishes. This is just such a nourishing, low carb, high fat dish. It’s enhanced by the zucchini noodles and it will cleverly have you believing you’re having a carb-full bowl of pasta.
To make Zucchini Noodles you need a spiralizer. I have a few of different shapes and sizes but find I use the small spiralizer the most. It’s compact, east to use and makes zoodles in mere minutes!
Zucchini Pasta Recipe – Creamy Avocado Zoodles
- 2 Tablespoons Mascarpone
- 1/2 an Avocado
- 1 Zucchini – spiralized into Zucchini Noodles
- Parmesan (Optional)
- In a bowl, combine the mascarpone and avocado.
- Mash well until smooth and creamy.
- In a small saucepan, gently heat the avocado sauce until warm.
- Add the spiralized Zucchini and cook until heated through.
- Once cooked to your liking stir through Parmesan to taste and enjoy.
