Corned Beef Hash Recipe
With St Patrick’s Day just around the corner, I decided to create a low carb, ketogenic diet friendly version of the classic Corned Beef Hash. (Here are more easy low carb St Patrick’s Day food ideas.)
It may not be the most Irish dish around, but I feel that my heart is in the right place and when I cook the dish and think of happy memories in Ireland – so it works for me.
I have a soft spot for all things Irish – I completely FELL IN LOVE with the country and it’s people when we visited last year and can’t wait to go back again in 2018.
Cauliflower is the perfect substitution for potatoes in this dish. You really don’t miss anything – you still get the crispy, carby texture and a hearty, wholesome bowlful.
To make corned beef hash, you need corned beef! I’ve shown you before how to make homemade corned beef. You can get the recipe here or watch the video tutorial below:
Onto the actual recipe. Note that I haven’t provided quantities as it really depends on the number of mouths you’re feeding and how meaty you want your dish. You could finish off your dish by topping your bowlful with a fried egg.
