This is one of those meals with endless possibilities – you can use any low carb friendly vegetable you like. Mixing together whatever combination your heart desires… or whatever ingredients you have in your kitchen!

Step 1: Sautee Your Vegetables Of Choice

Melt butter or coconut oil and add your vegetables of choice from below. Add more butter/coconut oil as needed.

Here are some ideas for vegetables to include in your breakfast scramble:

  • Broccoli
  • Mushrooms
  • Cauliflower
  • Spinach
  • Asparagus
  • Garlic
  • Onion
  • Peppers
  • Tomatoes
  • Zucchini
  • Green Beans
  • Brussel Sprouts
  • Radishes
  • Cabbage

Step 2: Prepare Your Eggs

Whisk together 2-3 eggs per person, along with a couple of tablespoons (or more) of cream.

Step 3: Put It All Together

Once your vegetables are cooked to your liking, pour over the whisked egg mixture.

Scramble together until perfectly cooked.

Step 4: Optional Extras

Here are some ideas for extras which you can add at the last minute to heat up or at the table:

  • Parmesan
  • Feta
  • Grated Cheese
  • Cooked Meat/Sausage/Chicken/Salami

Here’s the recipe that I followed in this instance:

Easy Keto Breakfast Scramble Recipe

  • Broccoli
  • Mushrooms
  • 2-3 Eggs Per Person
  • 2-3 Tablespoons Cream
  • Butter/Coconut Oil, for frying
  1. Chop the broccoli and mushrooms into bite sized pieces.
  2. Heat butter or coconut oil in a large frying pan.
  3. When hot, add the broccoli and mushrooms.
  4. Cook until softened and reduced.
  5. Meanwhile, beat the eggs and cream together until smooth.
  6. When the vegetables are cooked, add the egg mixture and scramble until cooked to your liking.
  7. Top with your topping, salt or seasoning of choice.
