Beef and Mushroom Soup Recipe
As the weather has gotten cooler in Melbourne, the natural urge for warm, nourishing meals has kicked in. I’ve been making countless soups and stews lately, which this recipe being one of my latest favourites.
This is one of those soups that’s so simple yet so flavourful. Each ingredient brings a flavour and nutritional punch.
You could replace the water with your stock or broth of choice. I don’t personally feel that it’s necessary as the dish creates it’s own broth during cooking which tastes AMAZING. I prefer to enjoy it in it’s natural state than add additional stock or flavourings. So simple yet so hearty.
Beef and Mushroom Soup Recipe
- 3-4 Garlic Cloves, peeled and diced
- 500g/1lb Diced Beef
- 250g/half pound Sliced Mushrooms
- Salt/Pepper/Seasoning to taste
- Water
- Coconut Oil/Butter for frying
- Heat a little coconut oil or butter in a large saucepan.
- When hot add the garlic and cook until fragrant.
- Add the diced beef and cook to seal.
- Once sealed add the mushrooms and cook until they have reduced slightly and beef has browned.
- Add salt, pepper or your seasoning of choice.
- Pour water over to just cover.
- Bring up to the boil and reduce to simmer for 45 minutes or until the beef is tender and falling apart.
- Remove from heat and serve.
