Keto Strawberry Cheesecake Mousse
After sharing the hot chocolate recipe last week, I’ve had some requests on my channel for low carb summer desserts, especially to celebrate strawberry season.
As we are approaching winter here in Australia and summer is quickly becoming a foreign concept to me, I headed to Pinterest for inspiration.
I found a couple of summery pins for Summer No Bake Cheesecake Salad. Endless cups of berries with a cream cheese sauce stirred through.
So, I decided to switch the ratios around to make it low carb, high fat friendly and that’s the deliciousness I’m sharing with you today. (Here’s the vegan version of this strawberry mousse.)
The easy recipe is perfect to enjoy whether as a creamy dessert for a special occasion or a lovely dessert with fresh berries for valentine’s day.

How To Make Keto Strawberry Mousse
The creamy mousse is so super easy to put together and is pretty much a cheesecake that’s no bake and crust free.
Start by pouring the heavy whipping cream into a large bowl and use a hand mixer to whisk the heavy cream to soft peaks.
You can use heavy, whipping or double cream. Whatever cream can easily be whipped into thickened stiff peaks will do.
In a separate bowl, whisk stevia into cream cheese until smooth and completely incorporated. You can also whisk in a pinch of salt or half a teaspoon of vanilla extract to enhance the flavor.
Then, fold the whipped cream into the cream cheese mixture until smooth and creamy.
Lastly, add the fresh strawberries, saving some back to use as topping for the dessert and mix the rest through, so that you have a dessert full of strawberry flavor in every mouthful.
You can serve the easy peasy dessert in one dish or divide it into individual portion controlled dessert cups for a dinner party.
Of course I had to serve my keto cheesecake mousse in my favourite pie dish, to continue the cheesecakey illusion of the easy dessert.
I love how the strawberries are poking through the mousse and mixed in in such a way that you enjoy a berry burst with every bite.

- 1 Cup Cream
- 250g/9 ounces Cream Cheese
- 1 Tablespoon Stevia
- 1/2 to 1 Cup Sliced Strawberries
- Pour the cream into a bowl and whisk with an electric mixer until thickened.
- In a separate mixing bowl, whisk the stevia into the cream cheese and continue whisking until smooth.
- Fold the whipped cream into the cream cheese.
- Mix through 3/4 cup of strawberries.
- Pour into a serving bowl or pie dish and top with the remaining 1/4 cup sliced strawberries.
- Place the creamy strawberry mousse into the fridge for a few hours to thicken, serve and enjoy.
