Low Carb Lemon Mousse Recipe
All of a sudden last week I wondered what my Mascarpone Chocolate Mousse Recipe would be like if I replaced the chocolate with lemon. A happy coincidence of a bag of lemons in my kitchen meant that in no time I had my answer.
YESSSSSS Lemon can replace the chocolate and result in a refreshing, creamy, dreamy mousse. I was actually doing a happy dance in the kitchen when I first tasted this Lemon Mousse. It’s just so good, the recipe so simple and having all the ingredients usually in my kitchen means that I can make this regularly. (And I will!)
You could definitely enjoy this dish as is or you could top with chopped nuts if you’re after a crunch factor. Or, you could even use this as a pie filling or in a trifle. Would be AMAZING!
Low Carb Lemon Mousse Recipe
- 1/2 Cup Mascarpone Cheese
- 1 Lemon
- 2 Tablespoons Stevia
- 1 Cup Cream
- In a bowl, whisk the mascarpone until smooth.
- Grate over the zest of the lemon over the mascarpone then cut in half and squeeze the juice over.
- Add the stevia and whisk until smooth.
- In a separate bowl, whisk the cream until thick.
- Fold the thickened cream into the lemon mixture.
- Taste to see if you need any extra sweetener and then move into a serving bowl.
- Refrigerate for a few hours to thicken and enjoy.
Serves 4
Macros per serving: 30g Fat, 2g Protein, 3.5g Carbs
