There’s something just so comforting about enjoying an enormous roast together with the family. I make mine on autopilot and SO often. I hadn’t even thought about sharing the recipe with you until one of my lovely viewers requested the recipe on my YouTube Channel. So, I’m sharing the deliciousness today.

Browning your lamb first in a frying pan seals in all the lovely juices, resulting in the perfectly tender and juice roast lamb.

Pop the sides into the roasting dish at the half way mark. This way your veggies don’t cook to a blackened crisp!

For sides, I opt for cauliflower, garlic and onion for myself and my Husband as we are low carb. I also cook potatoes and carrots for my carb fuelled kids.

Leg Of Lamb Recipe

  • Leg Of Lamb
  • Sides of choice – cauliflower, onion, garlic, potatoes or carrots
  • Sea Salt
  1. Preheat the oven to 180C/350F and get out a large roasting dish.
  2. Heat a large frying pan and when hot add the leg of lamb.
  3. Cook for a few minutes a side or until browned and the juices are sealed in.
  4. Move to the roasting dish, add salt and place into the oven for half an hour per 500g/1.1lbs. So a 2.5kg lamb would take 2.5 hours to cook, and turned at 1 hour 15 minutes.
  5. Half way through cooking, remove from the oven, turn the lamb over, add more salt and add your sides of choice.
  6. Once cooked through on both sides, remove from the oven, serve and enjoy.
