If you’ve followed my blog for a while now, then you’ll know that most afternoons I indulge in a keto friendly sweet treat of strawberries and cream.

I’ve done so for almost 10 months now (and have lost 17kg/37lbs in the process) and have started to feel like mixing it up a bit.

Out of nowhere, I starting thinking about transforming my strawberries and cream into a sort of a strawberry fool and see what happens.

I did a little fool research and found that you can mix whipped cream with yoghurt or creme fraiche if you want. You could also add a little lemon juice to balance the sweetness and richness of the dessert.

I decided to keep it simple though and just whip up HEAPS of whipping cream and then fold through strawberries that I mashed with a potato masher.

Yes, no boiling or machine pureeing necessary. You can easily achieve smashed strawberries with a humble potato masher!

Low Carb Strawberry Fool Recipe

  • 1 Cup Whipping Cream
  • 1/4 teaspoon Vanilla Extract
  • 1/2 Cup Chopped Strawberries
  • 1/2-1 teaspoon Stevia (Optional)
  • 1-2 teaspoons Lemon Juice (Optional)
  1. In a large bowl, beat the whipping cream to form stiff peaks..
  2. Whisk in the vanilla.
  3. In a separate bowl, mash the strawberries until smooth.
  4. Fold the strawberries into the whipped cream.
  5. Taste and add stevia and/or lemon juice to balance the strawberry fool to your tastes.
  6. Refrigerate for a few hours to cool and serve.
