Pesto Mushrooms Recipe
Lately I’ve been OBSESSED with Pesto. I shared Tuna Wraps the other week and I just keep experimenting with it.
Find the lowest carb pesto you can. The one I found was a tomato variety which was low carb and high fat. You could of course make your own pesto if you prefer.
You could enjoy this pesto mushrooms recipe as is in a bowl topped with Parmesan. Or, you could serve with zucchini noodles or your pasta of choice.
I haven’t specified exact volumes because it really depends on how many people you’re serving and how much pesto you want to use.
Pesto Mushrooms Recipe
- Sliced Mushrooms
- Pesto
- Butter or Coconut Oil, for frying
- Parmesan (Optional)
- Heat butter or coconut oil in a frying pan.
- When hot, add the sliced mushrooms
- Cook until done to your liking.
- Add pesto and stir through to heat.
- Serve as is or as a sauce for zucchini noodles.
- Top with (optional) parmesan, serve and enjoy.
