Coconut Flour Banana Pancakes
These easy coconut flour banana pancakes with 3 ingredients are a cross between my 2 ingredient banana pancakes and 3 ingredient banana waffles.
They make a quick and easy breakfast or indulgent breakfast for dinner. I tend to make a batch for my 2 kids to share, but if you’re making them for an adult the recipe makes enough for 1.

How To Make 3 Ingredient Banana Pancakes
This pancakes are quick and easy to make, all you need is:
- 1 Banana
- 2 Eggs
- 2-4 Tablespoons Coconut Flour
Start by mashing the banana until creamy and there are no lumps. If you’re using very small bananas then use 2 instead of the suggested one. (Here are more ideas for what to do with ripe bananas.)
Once your banana is mashed and creamy, whisk in the eggs until bubbly.
Finally, add in the coconut flour. (Here’s coconut flour on Amazon.)
Start with 2 small tablespoons, whisk it in and then if needed, add another 1-2 tablespoons. It will really depend on the size of the banana you’re using and how much coconut flour is needed to create perfect pancakes.
To cook the pancakes, heat coconut oil or butter in a frying pan. Make sure it’s really hot and then drop 1 to 2 tablespoons of the batter per pancake.
Cook until set and then flip and cook until the pancakes are cooked through and golden on both sides. Top your pancakes with your toppings of choice and enjoy.
