Cheesy Zucchini Casserole Recipe
Recently I found myself with 5 Zucchinis lurking in my fridge, so I put some of them to good use in this cheesy zucchini casserole with a handful of ingredients.
The cheesy bake main dish has only four simple ingredients that are easy to find at any grocery store:
- Chopped Fresh Zucchini or yellow squash
- Sour Cream
- Cream
- Cheese
You can use any cheese you like, or pick a few to make it extra cheesy. Pick from cheddar cheese, mozzarella cheese, parmesan cheese, gruyere cheese or your cheese of choice. You could also swap the sour cream or heavy cream for mayo or cream cheese if you like instead.
I just adore the combination of sour cream and rich cream – the cheesy zucchini bake is creamy and oh so flavorful.
I like to keep my 1/3 cup handy and then refill it with the sour cream, cream and then cheese. I tend to mix half of the cheese through the dish and top the dish with the other half so that there’s lots of cheese mixed through and topping every corner of the squash casserole.
You could also add in onion, garlic cloves, garlic powder, salt, black pepper, cayenne pepper or any other seasoning or vegetable you like to the zucchini bake recipe.
ALDI is great for stocking up on budget friendly cream, sour cream and cheese and the zucchini have been on offer lately for until a Euro a pack. So, this is a handy budget friendly easy side dish for when you find zucchini on sale too.
The cheesy side dish is naturally low carb and keto friendly, but you can feel free to sprinkle bread crumbs over the top of the casserole dish before it goes into the oven.
If you find yourself with any leftovers of the easy recipe then simply move the layers of zucchini with creamy cheese sauce to an airtight container and enjoy within a couple of days.
Cheesy Zucchini Casserole Recipe
- 2 Zucchini
- 1/3 Cup Sour Cream
- 1/3 Cup Heavy Cream
- 2/3 Cup Grated Cheese
- Preheat the oven to 180C/350F and get out a baking dish.
- Chop the zucchini into bite sized pieces and place into the baking dish.
- Pour over the sour cream and cream, stir to combine.
- Add 1/3 cup of the cheese and stir through so the cheese is well mixed in.
- Top with the remaining 1/3 cup of cheese or more to cover your zucchini with cheese to your liking.
- Place into the preheated oven for 20 to 25 minutes or until the zucchini has cooked and the cheesy dish has a golden topping.
This delicious cheesy zucchini casserole makes an easy meat free meal or perfect side dish that’s perfect for when you’re wanting a hearty comfort food with little effort.
