This hearty beef stew recipe makes the perfect, warming, comfort food meal that also happens to be brilliantly budget friendly.
The best part is that you can adapt the simple recipe to meet your own tastes, dietary requirements and budget, by including more or less meat and other basic ingredients.
How To Make The Easy Recipe
Start by removing your diced stewing meat from the fridge, opening the package and seasoning with your choice of seasonings. Mine are simply salt and ground paprika.
Heat a large pot on the stove top over medium to hight heat and add a few spoons of coconut oil or olive oil.
While the pot is heating, chop your choice of vegetables, mine are usually onion and garlic, and if I have them in the fridge I’ll add a chopped leek or carrots too.
Once the pot is hot, add in the meat, along with more seasoning if desired, and cook, tossing regularly until browned all over.
Add in the chopped onion and garlic, toss to combine and cook for a couple of minutes.
Regarding sauce, you can add in stock, wine, chopped tomatoes or your stewing liquid of choice. Mine is a little unorthodox – I add in a tablespoon of soy sauce or tamari and 4 tablespoons of tomato sauce for the perfect richly flavoured stew.
Add you sauce ingredients of choice, stir to combine then pour over water to fully submerge the meat.
Bring up to the boil, then reduce the beef stew down to a simmer and gently simmer for 1 hour.
After an hour, add further vegetables of choice, with my choice being peeled chopped potatoes and broccoli.
Bring the pot back up to a boil and reduce to a simmer for a final 1 hour of cooking time or until the meat and vegetables have cooked and softened to your liking.
Serve as is, or with a bread such as garlic bread or an artisan bread for dipping into the rich sauce, then store any cooled to room temperature leftovers in an airtight container to enjoy re-heated within a couple of days.
Easy Beef Stew Recipe
- 500g-1kg/1-2lb Chopped Stewing Beef
- Salt & Black Pepper
- Ground Paprika
- 1 Onion
- 3-4 Garlic Cloves
- 1 Leek (Optional)
- 1 Tablespoon Soy Sauce or Tamari
- 4 Tablespoons Tomato Sauce
- 4-6 Potatoes
- 1/2 to 1 Head of Broccoli
- Coconut Oil or Olive Oil, for cooking
- Heat a large pot, crock pot or Dutch oven on the stove top over medium to high heat, adding in a few spoons of coconut oil or olive oil to heat.
- Remove the meat from the packaging and season with salt, pepper, paprika or your seasoning of choice.
- Peel and chop the onion, garlic and leek, if using.
- Once the pot is hot, add in the seasoned diced beef and toss until browned all over.
- Add in the onion, garlic and optional leek, toss to combine then add the soy sauce or tamari and tomato sauce and stir well to incorporate.
- Pour water over the stew, ensuring that the meat is fully submerged in the liquid, then bring it up to a boil, reduce the pot to a simmer and gently cook for 1 hour.
- After an hour, peel and chop the potatoes and broccoli then add them to the stew.
- Bring the hearty beef stew back up to the boil, reduce it to a simmer and cook for a final 1 hour or until done to your liking. Serve as is and store any cooled leftover in the fridge to enjoy within a couple of days.
