The cake is completely gluten free, making it perfect to make whether you’re following a gluten free diet yourself, you want a break from gluten heavy desserts or whether you’re serving the tender cake to guests who are gluten free.

Here are the 4 ingredients you’ll need for the light cake:

Eggs – you’ll need 4 eggs for this recipe that you separate and whip separately.

Vanilla – you can use vanilla extract or essence to flavor the cake, or you can even use almond extract to enhance the almond flavor or mix through lemon juice, lemon zest, lime zest or orange zest for a citrus infused cake.

Sugar – it’s up to you whether you’d like to include sugar, stevia or your sweetener or sugar of choice in the cake. Use a half a cup to a cup of sugar, depending on how sweet you like your sweet treats to be.

How To Make The Simple Flourless Cake

The simple cake only has a couple of dry ingredients and a couple of wet ingredients to create a light, fluffy cake.

I find that the eggs work best when kept at room temperature, so take them out of the fridge a few hours before needed for baking.

Separate the large eggs into two bowls, first whisking the egg whites with an electric mixer, or in the bowl of a stand mixer with a whisk attachment, until thickened and meringue like.

Then, in the second large mixing bowl, whisk the egg yolks, vanilla and sugar until creamy and the sugar has fully dissolved.

Add the thickened egg whites into the egg yolk mixture, folding through gently until just starting to come together.

Sprinkle over the almond meal or flour and stir until you have a light cake batter.
